KBB#8: Bitter Chocolate Peppermint Biscuits


Lucky number 8!!

KBB-ers make biscuits again! Yippee... :D I love biscuit because it's easy to make and delectable :DD

It's really challenging for me since I have a very tight schedule on this month for work, wedding arrangement of mine (yup gals, I'm getting married next month ;)), and Rea's Cake kitchen.

Anyway, I still could sneak up a bit on my schedule...here is my presentation for KBB #8 task which I did some "creation" *winked...*

Preheat the oven to 180C. Place 185 g butter and 1 cup of caster sugar in the bowl of an electric mixer and beat until light and creamy......
Add 1 egg and beat well.....Sift 2 cups of plain flour and 1/2 teaspoon of baking powder over the egg mixture and fold through....I skipped the step of kneading, roll out, and refrigerate the dough... I just simply put the dough into the piping bag with star tip and press it onto the baking tray....I baked the biscuits for 10 minutes. In the meantime, I made the filling by combining 1 cup icing sugar, 1 teaspoon mint flavor , a drop of pink food-colouring (I'm completely in love :D) and 3 Tablespoons water. I don't have any bittersweet chocolate so I change it with 250 g melted-Ritter Sport Voll Nuss. The HAzelnut is everywhere of it!! YUmmy!! The result is PERFECT... minty filling, crunchy sensation from the biscuits and hazelnut.... I'll try for bittersweet chocolate next time...


*BIG Smile*.... finally I got the certified license of KBB #8 task....

So, I could say: mission accomplished :D

Ivan's Bday Cake





This cake brings a "what-a-small-world" cliche to me..
I got a call from a lady in Jakarta who wanted to order a cake for her brother, here in Bali. She gave me the details (name, cake's type, address) and yet it doesn't recall anything to me...

By some misunderstanding from my courier-man, I had to deliver this cake to Sanur by myself. kinda late than schedule (sorry ya 'van.....), I even didn't meet the birthday man as he went to church on that evening... Asli deh 'van.... rumah lo spooky bener deh jalannya....boooo...

Back to the cliche story: Ivan's worked for the same company as I am and also a relative of one of my co-workers! Hidup AG ya 'van :DDDD

Baby 1st Month Cake




Lebaran Fair 2008

Lebaran 2008 has passed away, months ago....
Still I want to share the story from Rea's Cake Kitchen. on this Lebaran, I was so blessed with a whole lotta of cake and cookies order... Hardly could sleep for more than 5 hours in a day for 4-days straight.
The favourite cake is Heavenly Choco Cake topped with fresh fruits.

Following with cookies (you could order it per box or get it wrapped in simple parcel like the pictures below), Rea's Cake provides assorted cookies from classic Kaastengels, Coco Crunchy, Putih Salju, Corny Flakes, Nastar, Vanilla Kattetong and Cheese Mushroom.

BIMC Cake

This is my first architectural 3D cake that I made for BIMC 10th Birthday on July 26,2008.
Actually, this order was requested for Mbak Lia but she passed it on to me because she thinks that I could handle it (thanks for such a highly trust ja Mbak). After some calls and emails with Mbak Mery, a nice lady from BIMC, the BIMC birthday commitee decided to order 3D birthday Cake sculpted like the BIMC building.

The "building" was made by 40x20 cm2 Heavenly Chocolate Cake with heights for the 1st building was 20 cm and second building was 12 cm. The cake was covered in sugar paste.

I know that I need to improve a lot ;-)

Yet, on July 27, 2008 I got a sms from Mbak Mery: (I hope you don't mind if I copy paste your sms here ya..)
"Mbak Rea, thanks a lot for the cute N gorgeous cake for BIMC! It's really nice to have it. Keep up the Great job sweety!"

Good to know that BIMC-ers like my homemade creation.
I am looking forward for another event of BIMC ya Mbak Mery...

Zebra for Mbak Ade

Actually, this pic should be post on July 16th on Mbak Ade's birthday "party" but as always I forget where I put my CF card hehehehe...(well, I still haven't found it till now :( )

Thanks God, my hunny still got some pictures on his camera and edited it for me. Too bad, he didn't has the zebra process step-by-step pictures. I'll try to describe it on verbal then, here it goes:
  • you will need a white fondant, rolled it over until you reach +/-8mm thick
  • Rolled out black fondant and cut it into un-even stripes like on real zebra.
  • Lightly brush the black fondant stripes with a little water then put in on rolled white fondant accordingly to zebra's stripes. Be careful not too brush the stripes with too much water because it will get too soogy and sticky hard to roll again.
  • Rolled out again the black fondant stripes which has been attached to the white fondant until +/-5mm thick.
  • Voila, You are ready to cover your cake with the zebra stripes....
I hope those explanation are clear enough :D

The cake itself is a carrot cake with cream cheese frosting. I'll post the recipe later ya.

At first, the cake idea was zebra motive with Mbak Ade's figurine holding a cigarette but unfortunately, my fingers were all thumbs :(( and I successfully failed in making her figurine hehehe. Then, I changed it into flowery theme as you can see at the picture.

CARS:Lightning McQueen

My 1st 3-D car cakes!!
I was sooo excited when Mbak Lia asked me to make a birthday cake for his son, Ivander. She requested a Cars -Lightning McQueen-theme and I offered her a 3-D McQueen. It's like a dream came true because I've been dying (oooops...exaggerating a bit here hehehehe) wanna tried to make this kinda cake.

Hmmmph, it's not as easy as I thought really. I still need to improve my skill on carving. The cars looked too squar-ish, wasn't it? hehehehe..It was RVC - Red Velvet Cake- that I loved to bake. The base is 28x28cm heavenly chocolate cake.

Anyway, the birthday boy was happy and everybody's enjoy the cake.

Bread ala Brulee

This the simple dessert to make that you could make it in a hurry. Serve it warm with ice cream or as cold dessert, both are okay.

I combine 4 lightly beaten eggs with 2 heapfull tablespoons of vanilla essence, 250ml heavy cream, 4 tablespoons sugar, and 27 tablespoons of MILK.

Cut 4-5 slices of 2-days old bread, put into a pyrex or aluminium foil case (I use 4 250-ml square foil case and 1 150-ml foil case). Pour in the milk mixture until full and the bread fully covered. Sprinkle with 4 teaspoons on RAISINS which has boiled with 2 teaspoons of rum or water.

Bake ala au-bain-marie for 20-25 minutes at 180*C until the cream is set.

Note: You could Sprinkle with a dash of cinnamon to enrich the flavour.

Fast 'n Details Cake

These cakes were ordered by Danny, owner of Fast n Details -Meguiar's Bali- for his customers. I got an exclusive contract to him by providing cakes for his clients' bday.
The cake were all Heavenly Chocolate Cake. The first picture is the latest design that I made for Fast n Details since I didn't quite satisfied with my previous attempt as you could see on pictures below.





Comments from Danny's clients so far were all good and some of them already order another cakes from me.

TollHouse Cookies

The Cookie recipe below is one of the easist chocolate cookies I ever made, yet the result is great.

TollHouse Cookies

A recipe from Cookies by Lucy Knox and Sarah Lowman

125 g/ 4 oz butter
40 g/1.5 oz soft light brown sugar
125 g/ 4 oz caster sugar (I only used 100 g)
1 egg, beaten
1 t vanilla extract
150 g/5 oz plain flour
0.25 t bicarbonate of soda
0.5 t salt
125 g/4 oz plain chocolate drops

  1. Grease 2 baking sheets ( I used silicon paper). Beat the butter with both sugar until light and fluffy. Add egg and vanilla extract, and mix well. Sift together the flour, bicarbonate of soda and salt. Stir in the sifted dry ingredients and plain chocolate drops.
  2. Place teaspoonfuls of the mixture, spaced apart, on the baking sheets and bake in a preheated oven, 180*C(350*F), gas mark 4, for 10 minutes. transfer to a wire rack to cool.
Makes about 36.
Prep time : 10 minutes
Cooking time : 10 minutes (I bake the cookies for 13-15 mins :p)

This is my first entry for Click event at Jugalbandi because I want to support Bri, as well as others who diagnosis by cancer. I know what it's like to deal with cancer, since my niece, my uncle, my grandma, my auntie (all from my mother-side line) were diagnosis by multiple type of cancers. We tried every possible ways that could bring them into curing both medical and alternatives.

Yellow is a symbol of happiness, which also signifies as hope and enlightement. Though the work of the LiveStrong Foundation, it has also come to signify the fight against cancer.

Red is a symbol of love, courage, braveness, and spirit. And through my picture taken above, I would like to bind all of hope, love, encouragement, and goos spirit in fighting against cancer.

I Love Swirls!!! -a bday cake-

Inspired by Mbak Widya's creation on Playing with Buttercream contest, I applied the same technique on this cake for my friends' daughter birthday party.
This is the 3rd times I made cake for Gek Bintang's Birthday, one for her otonan or 6-months celebration, 1st birthday and this one was for her 2nd birthday.
I ordered the edible image from Mbak Monica from Creative Kitchen. Thanks a lot ya Mbak for always catch up with my deadline hehehehe...

The swirls were colourful and bright, weren't they? I love it!! Thanks to Mbak Widya for inspiring me...

I also made some cupcakes and put smal edible images on it....Look at her expressions....

After we sang the birthday songs, Gek Bintang immediately ask for a knife to cut the cake...Look at her...really like a grown-up girl xixixixixi.... :D She put the sliced cake on cake plate and we all were encouraging her to give the cake to her granny...BUT....guess what!!..she just sit there comfortably then it the cake by herself hahahaha..,,what a cutie pie...

Yipeee!!! This is the waffle I LoVe!!

After trying so many waffles recipes, this one was definitely the best Waffle recipes I've tried. Its textures and taste nearly like waffles I used to eat at 5 stars hotels wherever I stayed on my traveling time.

I still wishing if someone could share waffle recipe from The Fullerton? Pleaseee..
No worries, I am full of hope. I'll be waiting ;D

Waffles are good with gamut of companions such as fresh fruits, ice cream (yeah, it's the best pairing ever!!!), yoghurt, honey, maple syrup, toffee sauce, chocolate....well, you name it..

I wasn't doing the instruction on exact for the temperature in Bali is getting hotter lately, I mix the ingredients on 5.30 AM and just rest the mixture on warm place then add 3 small eggs instead of 2 eggs stated on the recipe on 9 AM. It turned out just fine and crisp just they I like it. Perfect for my breakfast on SUnny Sonntag.

B/W Cheesecake


This is the result of my weekly-frigde-inspection...
I found 1 box of Ricotta cheese, 1/2 box mascarpone and Oreo's biscuit...

Friday nite, I baked Matcha Chiffon Cake for my friend, Mike. Pursuing to take full benefit of the HOT Oven, I make this cheesecake for weekend dessert...

B/W CHEESECAKE

Ingredients:
(Black base)
  • 250 gr oreo's biscuit, removes cream. (you could use any biscuit you like, indeed)
  • 150 gr butter, melted
Process oreos on food processor until fine crumbled. Add melted butter. Press firmly into the base and side of 20 cm pie tin. Leave on frigde for 15 mins.

(White cheesecake)
  • 250 gr ricotta cheese
  • 125 gr mascarpone
  • 4 T caster sugar
  • 2 eggs, separated
Smooth both cheeses using fork. Add yolks and sugar.
Beat egg whites until stiff. Add to cheese mixture.
Pour onto oreos shell.
Bake for 45 mins on au-ban-marie method on 180*C. Cool overnight.

To Serve:
sprinkle brown sugar evenly onto cheesecake surface, burn using blowtorch until caramelized stage reached. Served immediately so you could enjoy the crisp thin layer of brown sugar caramel.
Slices of Tamarillos or any fresh fruits on your choice.

Cake Pudding

Friday afternoon, just stepped out from my office door and I was on my way to my car then my cellphone's ringing. It showed one of my loyal customer's number, Bu Iin.
The conversation follows:
..........after short former talk.....
Bu Iin (BI) : Rea, I would like to order pudding for tomorrow morning.
Rea (R) : Ok BI, creme caramel like usually?
(BI) : Nope, I want cake pudding. Base is vanilla cake NOT chocolate, the second layer is milk pudding and top with fruit and clear jelly. You got the picture?
(R) : Rrrrr...I think so.... Ok, I'll make it for you. But, this would be my first attempt in making cake pudding.
(BI) : Ok. No prob. I order 2 pieces for tomorrow. I trust you as always....
........

Wow, really I'm honoured!! What a Trust from a customer!!.

Bu Iin, here are the cake puddings in Orange and Strawberry Flavour... Hope you enjoy it...
The Base: Sponge Cake which I baked in 22x22xm pan to fit in 20x20 cake-ring.
in the middle: Spongy Milk-pudding filled with chopped fresh orange and strawberries.
On top Fruit Cocktail and clear jelly/agar-agar.
