Charlene 1st month celebration
Thanks so much Jen...
Masalah topper teratasi dengan baik dan selamat deh.
Mb Yenny special request untuk ditambahin big flower di kepala baby nya karena itu merupakan trade mark-nya si Charlene.. So girly and fashionable yah :).
Ada mini cake untuk hantaran juga..
Thanks ya Mbak Yenny atas orderannya.

Pinky Wedding Cupcakes Set
Hmmmm....kalo dulu siy pasti jawabannya ga banget.. Tapi sejak berkecimpung di dunia perkuwehan, entah kenapa kalo disuruh buat sesuatu yang berwarna pink, sukaaaaa banget.
Design yang satu ini menambah koleksi favorit cupcakes ku, i really love the simplicity and the elegant look dari keseluruhan cupcake set ini.
Seneng deh...
Lebih seneng lagi setelah mendapat komplimen dari pemesannya..
Happy wedding Andy dan Lenny
God bless you

CLICK: Yellow for Bri

"Dear Bri,
Be Strong and keep thinking positive all the time"
This is my first entry for Click event at Jugalbandi because I want to support Bri, as well as others who diagnosis by cancer. I know what it's like to deal with cancer, since my niece, my uncle, my grandma, my auntie (all from my mother-side line) were diagnosis by multiple type of cancers. We tried every possible ways that could bring them into curing both medical and alternatives.
Yellow is a symbol of happiness, which also signifies as hope and enlightement. Though the work of the LiveStrong Foundation, it has also come to signify the fight against cancer.
Red is a symbol of love, courage, braveness, and spirit. And through my picture taken above, I would like to bind all of hope, love, encouragement, and goos spirit in fighting against cancer.

Chocobanana Cupcakes

May 31....My office's family day... We were going to Waterbom!! I've promised my co-workers that I would bring something for them on Family day and I decided to make cupcakes. The original recipe is Lapis Pandan Putih Telur from Mbak Monica which I revised at some parts (the revision are on bold and italic text). I also add banana to enrich the taste and it worked so well.
Chocobanana Cupcakes
Ingredients:
350 cc egg whites
10 gr cake emulsifier (Me: ¼ teaspoon)
200 gr caster sugar (Me: 160 gr only)
125 gr cake flour (Me: 80 gr cake flour, 40 gr dutch-process chocolate powder)
25 gr cornstarch
100 gr butter, melted
100 gr very ripe banana (about 1 large Cavendish banana), mashed
Ganache:
100 g dark cooking chocolate, chooped
150 g whipping cream
2 tablespoons rum
Directions:
1. Preheat oven to 180C. Shift dry ingredients. Set aside
2. Beat egg whites using electric mixer until foamy, add cake emulsifier. Mix well. Add sugar gradually. Continue mixing until stiff.
3. Add dry ingredients. Mix with the lowest speed setting.
4. Add melted butter, fold in using spatula.
5. Pour into cupcake paper. Bake for 20 mins if you are baking on small moulds like I do.
6. Cool and granish with ganache.
Ganache:
· Melt dark chocolate. Set aside
· Whip whipping cream untill double size.
· Pour in melted chocolate. Beat until combine.
· Add rum. Beat again until mix thoroughfully.

Verdict:
My co-workers and their kids loved it!! 30 cupcakes were gone in seconds...

Carrot Angel-Food Cupcakes
Ingredients:
350ml egg whites (about 12 egg whites)
200g caster sugar (I reduced to 150g)
1tsp Cream of tartar
½ tsp baking powder
100ml half and half or evaporated milk or just milk
½ tsp table salt
½ tsp yellow food colouring (just omit this one)
100g all-purpose flour
20g corn flour
30g milk powder
100g carrot, finely shredded
50g cheddar cheese, shredded (add some more like me, 75g)
Topping:
1tsp cinnamon powder, mix with
1 tbsp icing sugar
Directions:
Sift the dry ingredients altogether in a large mixing bowl. Pour in milk, shredded carrot and cheese. Mix using wooden spoon until smooth.
Preheat the oven to 180°C.
In other mixing bowl, beat egg whites till foamy, add cream of tartar. Beat again till combine. Stir in sugar and salt gradually. Beat until egg whites mixture gets into peak forms.
Gently fold in egg whites mixture on carrot mixture so the air won’t loose too much. Fold until well combined.
Pour into prepared cupcakes paper. Bake for 20 minutes or golden brown.
Cooled in racks before sift the topping onto.

Cookies and Cream Cupcakes
(From 500 Cupcakes and Muffins by Fergal Connolly)
For the cupcakes:
225 g unsalted butter, softened
225 g caster sugar (I used only 180 g)
225 g self-raising flour
1 tsp baking powder
4 eggs
1 tsp vanilla extract
10 crushed cream-filled chocolate cookies
For the icing:
Butter cream (recipe will be upload later)
10 chopped cream-filled chocolate cookies
Direction:
Preheat the oven to 175°C (350°F/ gas mark 4).
Place 18 foil or baking cases in muffin tins ( I used 12 muffins-tin size).
Combine all the cupcakes ingredients except the cookies, in a large bowl and beat with an electric whisk until smooth and pale, about 2 to 3 minutes. Stir in cookies
Spoon the batter into the cases. Bake for 20 minutes. Remove tins from the oven and cool for 5 minutes. Then remove the cupcakes and cool on a wire rack.
To make the icing:
Soften butter cream and stir in the chopped cookies. Spread the icing onto the cooled cupcakes.
Store without icing in an airtight container for up to 3 days, or freeze for up to 3 months.
Verdict: Very easy to make and crushed cookies mix gives a light crispy crunch to the cupcakes… Yummyyy…
