Palm Sugar Steamed Cake


YUmmmmmyyyy :D

My first encounter with this steamed cake was about 1 month ago when I was visiting one of the hotel in Kuta, looking for a place for my wedding reception (But, we:me&hunny, decided to celebrate our wedding reception at Niksoma later on)

I always love the taste of rock palm sugar. It's sweet but too too sweet... I think it's just perfect..

Time goes on....

And uncoincidentaly when I was in Malang (one part of my honeymoon after Kalimantan), Heiko (my mum-in-law's hubby) wanted to go to local bookstore, Gramedia Malang. Like many visits I made to bookstore, the first place to go is the cooking books' shelves "LOL"

I just couldn't resist it, dear!

I browsed some books and found Resep Praktis Sisca Soewitomo: Cake Lezat and it has brown sugar palm steamed cake recipe!! YIPEEEE...

The recipe is sooo simple and you could save your mixer in your cupboard :D
all you need is a whisker to combine all the ingredients ( Save the electricity!!!)

More over, the recipe only calls for 1 egg and I'm supportive enough for any recipes that using less egg ( I have to put concern on my health rite??) :D

Cake Gula Merah (Palm Sugar Steamed Cake)

Yield: 12 if using medium muffin tin, 24 if using small muffin tin

Ingredients:
125 g sugar (I use only 80 g)
125 g rock palm sugar, sliced. (I use 140 g)
150 ml water
250 g cake flour
1/2 t bicarbonate of soda (I use onle 1/4 t)
1/2 t instant yeast
1 egg
100 ml vegetable oil

How to:
  • Prepare the muffin tin, put the paper cup, set aside. Heat the steamer.
  • Put all sugar and water into a saucepan, bring to boil until sugar has dissolved. Remove from the heat, cool.
  • Add flour, combine well. Add bicarbonate of soda, instant yeast, and egg. Vigourously mix (add this step the mixture is a lil bit sticky)
  • Pour in oil slowly while continue whisking until the mixture is well combined and slick.
  • Divide evenly into the prepared tin
  • Steam for 15 mins with fire on its highest set until the cakes "blooming"
Tips:
  • Do NOT open the steamer lid while steaming. The cake won't "blooming" if you did.
  • Put the fire on the highest setting on your stove to create lots of steam.
  • Don't let the cake steamed for more than 16 mins because it will change the texture. the result will be dry.

Steamed Brownies Cake

Brokus Putih Telor (Ny.Liem)

Bahan:
750 ml putih telur
375 gr gula pasir
20 gr Emulfisier
275 gr Tepung terigu
75 gr coklat bubuk
1 sdt baking powder
1/2 sdt vanili
200 gr Dark Chocolate
250 ml Minyak goreng


Utk taburan tengah: 150 gr Dark chocolate ( di tim hingga cair) atau Meses


Cara membuat:
1. Campur minyak goreng dan dark chocolate, tim sampai coklat meleleh, aduk hingga rata. Sisihkan.
2. Campur tepung terigu, coklat bubuk, baking powder serta vanili, ayak halus supaya tdk ada bagian yg menggumpal.
3. Kocok putih telur hingga 1/2 mengembang, masukkan gula sedikit demi sedikit sambil dikocok terus. Baru kemudian masukkan emulfisier, kocok hingga kental. Matikkan mixer.

4. Masukkan campuran tepung ke dlm adonan telur sedikit demi sedikit. Aduk rata dgn menggunakan spatula
5. Masukkan campuran minyak + coklat yg sdh didinginkan. Aduk rata.

6. Panaskan kukusan. Olesi loyang dgn margarine, taburi tepung.
7. Tuang sebagian adonan, kukus selama 15-20 menit.
8. Taburi coklat cair atau meses. Kemudian tuang sisa adonan diatasnya. Kukus selama 20-30 menit atau hingga matang.

Tutty Fruity

I used to make this cake every time I have a lot of egg whites stocks in my fridge. The left over egg whites usually comes after I made chocolate cakes for Rea's Cake Order. Too pity to be wasted.This recipe is the solution hehehe.

Tutty Fruity

Part I:
600ml egg whites
275g caster sugar
½ tsp salt
1 tbsp cake emulsifier
½ tsp vanilla powder

Part II:
300g cake flour
1 tsp baking powder (if you do not use emulsifier, add 1 tsp more of baking powder)

Part III:
75g margarine, melted
extra oil for greasing

Part IV:
Orange essence
Strawberry essence
Pandan Essence or Melon Essence
Mocca Essence of Chocolate Essence

Directions:

1. Preheat steamer.
2. Lightly greased mould with oil and lined with parchment paper. If you are using plastic mould, simply grease the mould with oil only. ( I usually use two 2-litres pudding plastic-moulds).
3. Part I: Beat egg whites until soft peak formed. Add sugar gradually, keep on beating. Add salt, emulsifier and vanilla powder. Beat until double-sized and thick.
4. Fold in Part II in 4 batches. Mix till well combine. Stir in melted margarine (Part III). Fold in slowly with large spoon or spatula so the "air" won't collapse too much until well combined.
5. Divided mixture into 4 parts, drops each essence into it. Mix well.
6. Pour 1 part of the mixture to the prepared mould. Steam for 15 minutes. Pour in again 1 part of the other mixture. Steam for 15 minutes. Repeat this process to the rest of the mixture.
7. Remove from steamer and cake mould. Cooled.

Steamed Chocolate Brownies

This cake is moist and chocolicous, I dare to say. It's a real HIT for a while as a must-bring-home-cakes when you visit Bandung -The Flower City- in West Java. This recipe of course not the secret recipe of that famous steamed brownies of Bandung, but this one is even far better than the original one...Pretty easy to make really...

Steamed Chocolate Brownies
Recipe by Pak Sahak

Potion A
150g dark cooking chocolate
100g butter

Potion B
5 eggs
200g caster sugar
1 tbsp cake emulsifier (simply omit this)

Potion C
100g cake flour
20g corn flour
40g milk powder
40g chocolate powder
1 tsp salt
1 tsp baking powder
Chocolate rice/chocolate sprinkles (about 3 tablespoons)

Lined and greased Ø20 cm round cake tin

Directions:
* Preheat a steamer till boiled.
* Melt Potion A. Set aside. Cooled.
* Whisk Potion B with electric whisker till light and fluffy (+/- 7 minuten).
* Stir in melted Potion A. Fold in Potion C gently. Mix till combine.
* Pour half of the mixture into prepared tin. Steamed for 10 minutes.
* Sprinkle the chocolate rice over semi-cooked mixture. Pour in the rest of the chocolate mixture. Steamed till completely cooked (about 20 minuten).
* Remove from steamer. Turn it out and serve warm or cold with ice cream, a dollop of cream, or anything u like.
